Anderson had his first taste of Nonni's Tuna Fish Spaghetti. And he loved it!! Some pepole think it is weird to eat tuna spaghetti, but it is sooo good, and a nice alternative to beef. Well Anderson will never think it is weird, because he's going to grow up on it, like I did. That and Cottage Cheese and Macaroni (an easier, healthier, cheaper alternative to boxed Mac n Cheese), I think the cottage cheese and macaroni idea is from Baba. Just cook macaroni (like baby shells) toss with some butter and mix in some cottage cheese.
Here's the Recipe for the Tuna Fish Spaghetti Sauce, it's pretty quick and easy to make:
Ingredients:
1 medium onion finely chopped
3 Tbs. oil
1 Tbs. butter
1/2 cup finely chopped celery
1 small carrot finely chopped
4 whole cloves
1 680 ml can of HUNT'S Tomato Sauce (original recipe)
2 184 gram cans of SOLID Tuna in oil (UNICO brand is best - and packed in oil is important here)
Method:
In medium saucepan, saute onions, celery, carrots and cloves in oil and butter until softened (a few minutes). Add HUNT'S tomato sauce and simmer on low for 20-30 minutes. Add tuna gently, leaving some large chunks. Drain the oil from one can of tuna, but add the oil from the 2nd can. The tuna just needs to be heated and the sauce is ready to serve! Cook "spaghettini"(thin pasta) according to package directions or as al dente as you like. Drain well. Toss with some sauce to coat, add a generous ladle of sauce to each serving.
SERVES 6 - or 4 LARGE portions
